Blueberry Pecan Breakfast Sausage

Yields: ~20 bite sized patties; Serving size: 3-4 patties

Ingredients

  • 1 lb ground chicken (or lean ground turkey)
  • 1/2 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp dried marjoram
  • 1 tsp dried rosemary
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • 2 tbsp pecans, toasted + chopped
  • 1/3 cup fresh blueberries
  • Optional: 1/2 tsp maple extract OR 1 tbsp maple syrup

Method:

Preheat your oven to 400. Meanwhile, in a large bowl, add all spices to ground meat and mix thoroughly to combine. Really work the spices throughout! Add in pecans and mix again [pro tip 💡 buy your pecans in  pre-roasted pieces! Or roughly chop and roast for about 5 min on 400]. Gently fold in blueberries. Using a tablespoon, scoop the mixture and roll into small balls before flattening into patties. Arrange on a parchment lined baking sheet and bake for about 20 minutes.
