Recipe: Cauliflower “Mac” and Cheese

Spoiler alert: this recipe is high-cheese and low-carb! Real-deal dairy and faux mac in the form of golden, cruciferous cauliflower come together for a recipe that just might be my claim to fame. I mean, this could be my break-the-Internet moment.

All I can say is, thank the heavens above that with a little self-check, I quit demonizing cheese and decided to reintroduce it to my balanced, nutritious diet. Because baby, I was cravin’ a fitlicity spin on my favorite blue box of elbows and cheese powder 😉 and baby, a star was born. Introducing, for the first time on the web: Cauliflower “Mac” and Cheese

This recipe is:

Ingredients
Yields 1-2 servings

  • 1 head cauliflower, leaves removed and chopped into florets
  • 1/3 cup (about 75g) plain greek yogurt
    • Tip! I use nonfat greek yogurt when serving with my favorite almond-crusted chicken tenders, and full fat greek yogurt when serving with lean protein.
  • 1/2 oz shredded mozzarella (or sharp cheddar! or a mix! go crazy!)
  • 1 tbsp shaved parmesan
  • 1 tbsp nutritional yeast
  • 1 tsp EVOO
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • dash of chili powder, salt, and pepper
  • sliced scallion for garnish

Method

  1. Preheat your oven to a toasty 425 degrees
  2. Drizzle cauliflower with EVOO and spices (smoked paprika, garlic powder, chili powder, salt, and pepper) and toss to combine on a parchment lined baking sheet and roast for 30-40 minutes, until tips of florets are golden brown
  3. Transfer roasted cauliflower to a to a medium sized pot over medium-low heat
  4. Add greek yogurt, nutritional yeast, and cheese and stir to combine until cheese is melted
  5. Top with sliced scallion (a sprinkle of Everything But The Bagel seasoning is also divine) and enjoy!
